- Season the boneless chicken with salt, pepper, and paprika
- Heat oil in a skillet
- Place chicken in the pan and brown on both sides
- Remove to slow cooker
- Add onions, carrots, celery, mushrooms to the pan
- Season to taste with salt and pepper
- Sauté all the added vegetables until vegetables are fragrant and liquid evaporates (5 minutes)
- Scoop into the slow cooker
