In this recipe, we will be using skinless and boneless chicken, one tablespoon of olive oil, low sodium broth, and a lot of vegetables. We can
serve this slow cooker chicken vegetable stew on its own, or with some crusty whole-grain bread. If you want a thick gravy, you could add a mixture of cornstarch and cold water in the end.

Ingredients

Following are some of the ingredients that we will be using while making slow cooker chicken vegetable stew:

  • 1 pound boneless chicken (breast)
  • ½ Spanish smoked paprika
  • ½ teaspoon black pepper
  • Teaspoon salt ½
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 carrots coarsely chopped
  • 2 celery stalks coarsely chopped
  • 10 ounces fresh mushrooms finely chopped (I used the food processor)
  • salt and pepper to taste
  • 3 potatoes cut up
  • 1 fresh thyme sprig
  • 3 leaves fresh sage
  • 01 small fresh rosemary sprig
  • 1 1/2 cups Roasted Garlic Tomato Sauce or plain tomato sauce
  • 01 cup low sodium chicken broth

Instructions:

For a delicious slow cooker chicken vegetable stew, follow the mentioned-below instructions:

  1. Season the boneless chicken with salt, pepper, and paprika
  2. Heat oil in a skillet
  3. Place chicken in the pan and brown on both sides
  4. Remove to slow cooker
  5. Add onions, carrots, celery, mushrooms to the pan
  6. Season to taste with salt and pepper
  7. Sauté all the added vegetables until vegetables are fragrant and liquid evaporates (5 minutes)
  8. Scoop into the slow cooker
  9. Add potatoes, herbs roasted garlic tomato sauce
  10. Chicken broth to a slow cooker and toss everything
  11. Cover and cook on medium-high flame for 3 to 4 hours

Extra Tips

You can substitute 1 ½ cup chopped tomatoes for the roasted garlic tomato sauce if you like that. If you are adding this sauce, add a few chopped garlic cloves to vegetables while sautéing.
